Buffalo Chicken and Rice Casserole: Omit the thyme, white wine, and minced garlic from the recipe. Prepare rice according to package directions. Mix in corn, beans and chilis and spices. Mix in chicken with rice and top with cheese.

- Clean the chicken breasts & cut off any fat. Then cut chicken into small"cubes"
- In a large frying pan put in the olive oil, 1/4 of butter, chicken cubes, and all seasonings.
- On medium heat cook the chicken until lightly brown
- While chicken is cooking boil 5 cups of water & 2 tablespoons of butter in a large pot.
- When water begins to boil add rice. turn heat down to a simmer stirring rice occasionally until rice is about cooked halfway. ( rice will continue to cook once in oven so you want to be careful not to over cook it)
- Using a large casserole dish start preparing the rest of the ingredients. Pour in chicken broth, cream of chicken soup
- In a medium pot steam broccoli until it's about halfway done. ( again broccoli will continue to cook in oven so you want to be careful not to over cook it) Add broccoli to casserole dish.
- Dice up the onion and add to casserole dish
- Cut up mushrooms (not too small) and add to casserole dish.
- Melt the remaining butter and add to casserole dish
- Add all three cheeses to the casserole dish But make sure you save about 1/2 a cup of the cheddar cheese for later
- Add cooked rice and cooked chicken to casserole dish. mix up all ingredients in casserole dish so everything is evenly distributed throughout.
- Preheat oven to 350°Once oven is preheated put in casserole uncovered for 45min
- After casserole has been in the oven for 45min take out of oven and sprinkle the remaining cheddar cheese and french fried onions on top. Put back in oven for another 15min.
- Voila dinner is now done !
