Pour stock into a large pot and mix in rosemary, garlic, pepper, celery seeds, fennel seeds, clam juice, tomato puree and butter. Just before serving, stir in prawns.   2. Prepare a medium pot. Heat up pot under a Medium heat, pour 2 Tablespoon Olive Oil. Once hot, sautee Onions and Garlic. Pour in the Prawn Shell in. Cook till the Prawn shell turns colour. Pour in Water. Once boiled, turn down the heat and let the stock simmer and reduce to abit.
  3. Off the heat, completely remove shell from stock. Once done, turn up the heat to medium and put in the Tom Yum paste in. Stir well and season it with Salt. Once boiled, put the Prawns in and let cook for about 2 minutes. Taste and add salt if needed. Last, adjust it with Cream to thicken and season with dry Dill. Ready to serve.

Just before serving, stir in prawns. Bring the stock to a simmer in a medium saucepan. Add the chilli and garlic paste, then bring back to the boil. Remove the pan from the heat, then add the lime juice and fish sauce. I have made this many times using only the shells and heads and thickening the soup with a little flour, this is especially great when you have shells and heads left over from using the prawns for another recipe.
