- Rinse escarole set aside
- Crisp salt pork on medium/ high heat
- In small saucepan Bring to boil chicken stock
- While pork is cooking drain and rinse beans
- Once pork is cooked add garlic and fry till carmelized
- Add in beans and spices and turn heat down and simmer 5 minutes
- Then add escarole to pot and add 1 cup of stock tuen heat back up
- Add escarole and stock till all in the pot
- Serve immediatly or rapid chill and store in fridge
